Our Head Chef Killian proves his passion for using local produce and ingredients, in this cooking demonstration of our very popular dish 'Local Organic Turf Smoked Bacon'.
The cooking demonstration took place at The Whole Hoggs farm, our local pork producer from just outisde the village of Slane. Using ingredients all from our own doorstep, the dish consists of; The Whole Hoggs Bacon, Heritage Potatoes from Ballymakenny Farm, garlic and onions from Tankardstown House Gardens, Newgrange Gold Oil, Homegrown Sage, Rosemary and Apples from The Whole Hoggs Farm and edible flowers from Little Cress Microgreens.
